Ingredients

For the Chicken:

  • • 2 lbs boneless chicken thighs, cubed
  • • 1/2 cup plain Greek yogurt
  • • 1 tbsp garam masala
  • • 1 tsp ground cumin
  • • 1 tsp paprika
  • • 1/2 tsp turmeric
  • • 3 cloves garlic, minced
  • • 1 inch ginger, grated
  • • Salt to taste

For the Sauce:

  • • 2 tbsp ghee or butter
  • • 1 large onion, finely chopped
  • • 4 cloves garlic, minced
  • • 1 inch ginger, grated
  • • 1 can (14 oz) crushed tomatoes
  • • 1 cup heavy cream
  • • 2 tbsp tomato paste
  • • 1 tbsp garam masala
  • • 1 tsp ground coriander
  • • 1/2 tsp cayenne pepper
  • • Salt and pepper to taste
  • • Fresh cilantro for garnish
Instructions

Marinate the Chicken:

  1. 1. In a large bowl, combine yogurt, garam masala, cumin, paprika, turmeric, garlic, ginger, and salt.
  2. 2. Add chicken pieces and marinate for at least 30 minutes.

Cook the Chicken:

  1. 3. Heat 1 tbsp ghee in a large skillet over medium-high heat.
  2. 4. Cook marinated chicken until browned and cooked through, about 8-10 minutes.
  3. 5. Remove chicken and set aside.

Make the Sauce:

  1. 6. In the same skillet, add remaining ghee and sauté onions until golden.
  2. 7. Add garlic and ginger, cook for 1 minute until fragrant.
  3. 8. Stir in tomato paste, garam masala, coriander, and cayenne.
  4. 9. Add crushed tomatoes and simmer for 10 minutes.
  5. 10. Stir in heavy cream and return chicken to the skillet.
  6. 11. Simmer for 5-7 minutes until sauce thickens.
  7. 12. Garnish with fresh cilantro and serve hot.
