Ingredients
  • • 2 lbs beef chuck, cut into 2-inch cubes
  • • 2 large onions, diced
  • • 3 cloves garlic, minced
  • • 3 tbsp Hungarian sweet paprika
  • • 1 tsp hot paprika (optional)
  • • 2 tbsp tomato paste
  • • 4 cups beef broth
  • • 2 medium turnips, cubed
  • • 1 red bell pepper, chopped
  • • 2 bay leaves
  • • 1 tsp caraway seeds
  • • 2 tbsp lard or olive oil
  • • Salt and pepper to taste
  • • 1/2 cup sour cream for serving
Instructions

Prepare the Base:

  1. 1. Heat lard in a large Dutch oven over medium-high heat.
  2. 2. Season beef cubes with salt and pepper, then brown on all sides. Remove and set aside.
  3. 3. In the same pot, sauté onions until translucent, about 5 minutes.
  4. 4. Add garlic and cook for 1 minute until fragrant.

Build the Goulash:

  1. 5. Remove pot from heat and stir in both paprikas and tomato paste.
  2. 6. Return beef to pot and gradually add beef broth, stirring constantly.
  3. 7. Add bay leaves and caraway seeds. Bring to a boil.
  4. 8. Reduce heat to low, cover, and simmer for 2 hours.

Finish the Dish:

  1. 9. Add cubed turnips and bell pepper to the pot.
  2. 10. Continue simmering for 45-60 minutes until vegetables are tender.
  3. 11. Remove bay leaves and adjust seasoning with salt and pepper.
  4. 12. Serve hot with a dollop of sour cream.
